Easy Egg Fried Rice

Ingredients

  • 2 Teaspoons Olive Oil
  • 1 Teaspoon Sesame Oil
  • 2 1/2 Cups White Rice (Cooked and Cooled)
  • 1/2 Cup Frozen Peas
  • 1/2 Cup Frozen Carrots
  • 1/2 Cup Onions ( Cut into small pieces)
  • 2 Teaspoon Minced Garlic
  • 2 Tablespoons Soy Sauce
  • Greens Onions To Sprinkle On Top

Instructions

  • Gather all the ingredients.
  • Cut onions into small pieces. In a bowl whisk the eggs together. Set aside to use later.
  • Add oil to a pan or wok and heat. Then add peas, carrots, onions, and minced garlic. Cook until they are tender.
  • Move onion, peas, carrots to one side of the pan. Add oil and eggs to the other side of the pan and then scramble the eggs. Once done cooking mix all the ingredients together.
  • Add the rice to the pan and stir together. Add soy sauce and sesame oil. Mix everything together.
  • Cook until everything is heated.
  • Taste and add extra sauce or seasonings if needed.
  • Sprinkle green onions on top.

Notes

  • Use cold or leftover rice. 
  • Long grain rice or jasmine rice works best for making fried rice.
  • Rinse the rice before cooking.
  • Break up the rice before adding to the pan or wok.
  • Cook on high heat. This will brown the rice.
  • When you add rice to your pan to make the fried rice watch your cooking time so that the rice does not burn.
  • Cool down the rice completely before freezing.
