Ingredients

  • 1 1/2 Pounds Yukon Gold Potatoes
  • 1 Teaspoon Minced Garlic
  • 1/2 Teaspoon Salt
  • 1/2 Cup Vegetable Broth
  • 1 Tablespoon Mayonnaise
  • Cilantro Flakes For Topping

Instructions

  • Gather all your ingredients so that you have everything you need close by.
  • Wash, peel, and cut potatoes into chunks.
  • Place potatoes into a pot and fill with cold water.
  • Cover and bring the potatoes to a boil.
  • Once boiled uncover and continue cooking the potatoes until they are tender and soft.
  • Drain the water from the potatoes and then mash the potatoes. Add mayonnaise and stir in.
  • In another pot add vegetable broth, salt, and minced garlic. Bring to a boil and then remove from the heat.
  • Add the broth mixture to the potatoes and stir in.
  • Taste and add additional salt if needed.
  • Top with dried cilantro flakes and enjoy.

Store covered mashed potatoes in the refrigerator for up to 3 days.

Can You Make Ahead?

You can make mashed potatoes ahead of time for up to 2 days. Follow all the cooking instructions and then store. When ready to eat, reheat and then serve.

Can You Freeze Mashed Potatoes?

Yes, you can freeze mashed potatoes. Make a batch of your favorite potatoes and freeze to eat later. Let them cool down completely before freezing. Once cooled down you can then transfer them to a freezer-safe bag or container. Label with the name and date and then freeze. Freeze for up to 1 month.
