Gather all your ingredients so that you have everything you need close by.
Wash, peel, and cut potatoes into chunks.
Place potatoes into a pot and fill with cold water.
Cover and bring the potatoes to a boil.
Once boiled uncover and continue cooking the potatoes until they are tender and soft.
Drain the water from the potatoes and then mash the potatoes. Add mayonnaise and stir in.
In another pot add vegetable broth, salt, and minced garlic. Bring to a boil and then remove from the heat.
Add the broth mixture to the potatoes and stir in.
Taste and add additional salt if needed.
Top with dried cilantro flakes and enjoy.
