Ingredients

  • 1 lb ground beef
  • 3 cups beef broth
  • 1 can corn
  • 1 can kidney beans
  • 1 can black beans
  • 2 teaspoons minced garlic
  • 1 package taco seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon olive oil
  • 1 onion

Instructions

  • Gather all your ingredients.
  • Cut onion into small pieces and set aside.
  • Open can of corn, kidney beans, and black beans and drain.
  • Rinse kidney and black beans. Set aside.
  • In a small bowl combine taco seasoning, garlic powder, and red pepper flakes. Stir around and set aside.
  • Heat a large pot on medium heat with a small amount of oil.
  • Add ground beef and onions. Stir around breaking apart any chunks of ground beef. Cook until browned.
  • Drain fat from ground beef.
  • Return to stove and add corn, kidney beans, and black beans. Stir around.
  • Add minced garlic and stir well.
  • Next, add 3 cups of beef broth and mix around.
  • Now add your seasoning and stir well to combine all the ingredients together.
  • Cover pot and bring to a boil.
  • Reduce heat and let simmer for 10-15 minutes, depending on how soft you want your beans to be.
  • Enjoy.
  • Top with sour cream and cheese if you like.

Tips

  • Drain fat from ground beef.
  • Rinse the beans to reduce salt.
  • Omit the red pepper flakes if you don’t like it a little bit spicy.
  • If you want it extra spicy add in more red pepper flakes or jalapenos.
