Spicy Shrimp Stir Fry

Ingredients

  • 1 16 oz. Small Raw Shrimp Peeled, Deveined, Tail Off
  • 2 Cups California Blend Mix Vegetables
  • 4 Teaspoons Olive Oil
  • 1 Small Onion
  • 1 Small Red Pepper
  • 1 Teaspoon Basil
  • 1 Teaspoon Parsley
  • 1/4 Cup Soy Sauce
  • 1/2 Cup Water
  • 1 Teaspoon Corn Starch
  • 2 Tablespoons Brown Sugar
  • 1 Teaspoon Apple Cider Vinegar
  • 2 Tablespoons Minced Garlic
  • 1 1/2 Teaspoon Red Pepper Flakes

Instructions

  • In a bowl combine soy sauce, water, brown sugar, apple cider vinegar, minced garlic, corn starch, and red pepper flakes. Whisk around well. Cover and set aside, you will use it later.
  • Cut up red pepper and onion into thin slices.
  • Heat a frying pan or wok on medium heat with oil. Add shrimp, basil, parsley and cook for 2-3 minutes.
  • Remove the shrimp from the frying pan and place it in a bowl to use later.
  • Heat the same frying pan on medium heat with oil. Add onion and red pepper. Cook for 1-2 minutes.
  • Add the vegetables to the frying pan and cook for 5 minutes.
  • Now add the shrimp back to the frying pan and stir around well.
  • Add your sauce mixture to the frying pan and stir around. Cook for another 3-5 minutes until the sauce is warm.
  • Your dish is now ready to enjoy.

Notes

How To Store
Store in the refrigerator for 1-2 days as the vegetables tend to become mushy the longer they sit.
Tips
  • To thaw the shrimp out quickly run under cold water.
  • Don’t overcook the shrimp.
  • Thaw out the vegetables before cooking if you are using frozen vegetables.
  • You can add other vegetables if you prefer.
  • If you don’t have cornstarch you can use flour.
  • You can reduce the number of red pepper flakes if you don’t want it too spicy.
