Ingredients

  • 1 1/2 Cups Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • 3 Teaspoons Milk
  • 1 1/2 Teaspoons Vanilla
  • 6 Tablespoons Butter (softened)
  • 2/3 Cup Brown Sugar
  • 3 1.33 Oz Small Boxes of Raisins
  • 2 Eggs
  • 4 Ripe Bananas

Instructions

  • Gather all you ingredients.
  • Preheat oven to 425.
  • In a large bowl add flour, baking powder, baking soda, salt, cinnamon, and brown sugar.
  • With your second bowl, you will add butter, eggs, milk, and vanilla. Mix around well.
  • Add the wet mixture of eggs into the dry mixture.
  • Peel the bananas and then mash them with a fork on a plate. Add the bananas to your batter, and then mix everything together.
  • Add the raisins and mix them in.
  • Next, line a muffin pan with muffin liners.
  • Take a spoon and fill the liners with the batter all the way to the top.
  • Place the muffins in the oven and bake for 5 minutes at 425, then reduce heat and continue cooking for an additional 15 minutes at 350. To check if done insert a toothpick in the center and see if it comes clean.
  • Let the muffins cool for 10 minutes and then enjoy.

How To Store

The muffins can stay fresh at room temperature for a couple of days. Store in the refrigerator for up to 7 days.

Can I Freeze Muffins

Yes, you can. Freezing them is a great way to store them to use later. To freeze the muffins you want to make sure that they are cooled down completely. After cooled down place them on a baking sheet and freeze them for 30-60 minutes. Then you will tightly wrap the muffins and place them in a freezer-safe container or bags. Store in the freezer for up to two months.
