Ingredients

  • 1 1/2 Cups Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 3 Teaspoons Milk
  • 1 Teaspoon Vanilla
  • 1/2 Cup Butter (softened)
  • 2/3 Cup Brown Sugar
  • 1 Cup Raisins
  • 2 Eggs
  • 4 Ripe Bananas

Instructions

  • Gather all you ingredients.
  • Preheat oven to 350.
  • In a large bowl add flour, baking powder, baking soda, salt, and raisins. Mix around well.
  • Use a second bowl and add butter, brown sugar, milk, and vanilla. Mix around well.
  • In a small bowl crack the eggs and whisk around well.
  • Then add the eggs to your wet mixture. Mix around well.
  • Peel the bananas and then mash them with a fork on a plate. Add the bananas to your wet mixture and mix around well.
  • Add the wet mixture into the dry mixture and then mix around well to combine all the ingredients.
  • Line a muffin pan with muffin liners.
  • Spoon the batter into the muffin liners and fill to the top.
  • Put the muffins in the oven and bake for 20 minutes. To check if done insert a toothpick in the center and see if it comes clean.
  • Let the muffins cool for 10 minutes and then enjoy.

The muffins can stay fresh at room temperature for a couple of days. Store in the refrigerator for up to 7 days.

Can I Freeze Muffins

Yes, you can. Freezing them is a great way to store them to use later. To freeze the muffins you want to make sure that they are cooled down completely. After cooled down place them on a baking sheet and freeze them for 30-60 minutes. Then you will tightly wrap the muffins and place them in a freezer-safe container or bags. Store in the freezer for up to two months.
