Hearty Vegetable Soup Recipe

Warm up with a delicious pot of soup. This vegetable soup is simple to make and full of flavor. It ia an easy recipe to make for lunch or dinner that the whole family can enjoy.

Ingredients

  • 2 Teaspoons Oil
  • 1 Medium Onion
  • 4 Cups California Blend Frozen Vegetables( Carrots, Broccoli, and Cauliflower).
  • 1 Small Red Pepper
  • 3 Tablespoons Minced Garlic
  • 64 Oz. Beef Broth
  • 15.25 Oz. Can Golden Sweet Whole Kernel Corn
  • 14.5 Oz. Can Green Beans
  • 2 Medium Potatoes ( cut into cube pieces)
  • 2 Teaspoons Parsley
  • 2 Teaspoons Cilantro
  • Salt To your taste
  • 1 Teaspoon Oregano
  • 1 Teaspoon Rosemary

Instructions

  • Gather all the ingredients.
  • Prepare all your ingredients( cut the onion, red pepper, vegetables, and potatoes into small pieces.
  • Heat oil in a large pot.
  • Add the onions and red pepper. Sautee for 1 minute.
  • Now add the minced garlic and cook for 30 seconds.
  • Add the beef broth, potatoes, and spices to the pot. Stir around and bring to a boil.
  • Reduce the heat and add the frozen vegetables that you cut up to the pot. Stir around. Cover the pot and let it simmer for 20-25 minutes or until the potatoes are tender.
  • When the soup is just about done cooking add the corn and green beans. Mix everything around well and cook for an additional 5 minutes.
  • Add additional salt if needed.
  • Your soup is now ready to enjoy.

Notes

I used California blend frozen vegetables for this recipe. Since they usually come in bigger pieces, I like to cut them into smaller pieces before adding them to the soup.

Tips

  • Cut the frozen vegetables into small pieces before adding them to the soup.
  • Also, cut the potatoes into cube pieces before adding them to the pot of soup.

Storing Instructions

Refrigerator: Store in the refrigerator in an airtight container for 3-4 days.
You can also freeze to eat later.

How To Reheat

You can reheat this soup on the stovetop, or microwave.
Reheat on the stove over medium heat in a pot. Add extra water if needed. Bring to a boil and then reduce heat and simmer for 2 minutes.
You can also reheat the soup in the microwave. Heat for 1-2 minutes or until hot.
