Gather all the ingredients.
Prepare all your ingredients( cut the onion, red pepper, vegetables, and potatoes into small pieces.
Heat oil in a large pot.
Add the onions and red pepper. Sautee for 1 minute.
Now add the minced garlic and cook for 30 seconds.
Add the beef broth, potatoes, and spices to the pot. Stir around and bring to a boil.
Reduce the heat and add the frozen vegetables that you cut up to the pot. Stir around. Cover the pot and let it simmer for 20-25 minutes or until the potatoes are tender.
When the soup is just about done cooking add the corn and green beans. Mix everything around well and cook for an additional 5 minutes.
Add additional salt if needed.
Your soup is now ready to enjoy.
