I used California blend frozen vegetables for this recipe. Since they usually come in bigger pieces, I like to cut them into smaller pieces before adding them to the soup.

Storing Instructions

Refrigerator: Store in the refrigerator in an airtight container for 3-4 days.

You can also freeze to eat later.

You can reheat this soup on the stovetop, or microwave.

Reheat on the stove over medium heat in a pot. Add extra water if needed. Bring to a boil and then reduce heat and simmer for 2 minutes.

You can also reheat the soup in the microwave. Heat for 1-2 minutes or until hot.

How To Make Vegetable Soup

  • The first thing to do is to gather all the ingredients so that you have everything that you need close by.
  • Prepare all your ingredients( cut the onion, red pepper, vegetables, and potatoes into small pieces.
  • Heat oil in a large pot.
  • Add onions and red pepper. Sautee for 1 minute.
  • Now add the minced garlic and cook for 30 seconds.
  • Add the beef broth, potatoes, and spices to the pot. Stir around and bring to a boil.

  • Reduce the heat and add the frozen vegetables that you cut up to the pot. Stir around, cover the pot and let it simmer for 20-25 minutes or until the potatoes are tender.
  • When the soup is just about done cooking add the corn and green beans. Mix everything around well and cook for an additional 5 minutes. Add additional salt if needed.
  • Your soup is now ready to enjoy.

Can I Use Other Ingredients

I get this question a lot and here are some of my suggestions for substitutions.

Vegetables: I used frozen vegetables for this recipe. You can use what you have at home or add additional vegetables to this recipe.

Broth: I used beef broth for this recipe. You could also use chicken or vegetable broth.

Spices: I used parsley, cilantro, salt, oregano, and rosemary. Feel free to add additional spices depending on your taste.

Garlic: If you don’t have minced garlic you can use a clove of whole garlic. Cut the garlic into small pieces. You would need to cook the garlic a bit before adding the rest of the ingredients if you will be using a whole clove of garlic.

Spicy: You can use red pepper flakes or hot sauce to make the soup spicy.

  • 4 Cups California Blend Frozen Vegetables( Carrots, Broccoli, and Cauliflower).

  • 64 Oz. Beef Broth
  • 15.25 Oz. Can Golden Sweet Whole Kernel Corn
  • 14.5 Oz. Can Green Beans
  • 2 Medium Potatoes ( cut into cube pieces)

  • 2 Teaspoons Cilantro
  • Salt To your taste
  • 1 Teaspoon Oregano
