Whenever I am trying to get my kids to eat more leafy greens, this is my go-to recipe. Instead of using pasta sauce try something different and top with this creamy spinach sauce. You only need a few simple ingredients to make this recipe.

The following ingredients will be needed to make this spaghetti with spinach sauce. You will need spaghetti, seasoned southern style spinach, coconut milk, oil, minced garlic, and salt.

Spaghetti– these pasta noodles work great for this recipe. Spaghetti is cheap to buy and one package can make a full meal for the family.

Seasoned Spinach- this spinach in the can is seasoned well and is perfect for this recipe.

Coconut Milk- it gives the sauce a great creamy texture which is full of flavors.

Minced Garlic- gives the recipe the right amount of garlic flavor

Salt- a small amount of salt is needed to tie everything together.

Directions

Step 1: Gather all the ingredients you need.

Step 2: Fill a large pot with water and salt. Bring it to a boil.

Step 3: Add the spaghetti to the water. Cook for 8-10 minutes.

  • Follow the directions on the package to cook the spaghetti.
  • You want the spaghetti to be tender, but not mushy.
  • Add a bit of salt to the water you will be cooking the spaghetti with.

Step 4: Now you will make the spinach sauce.

Step 5: Open the can of spinach and drain all the water out.

Step 6: Then open the can of coconut milk and set it aside to use later.

Step 7: Next, heat a frying pan with oil. Add the minced garlic to the frying pan. Cook for a minute stirring frequently. You don’t want the garlic to burn.

Step 8: Add the spinach to the frying pan and stir around. Cook for 2-3 minutes.

Step 9: Now add the coconut milk to the frying pan and stir everything together. Add salt. Cook for an additional 2- 5 minutes until the sauce is heated.

Step 10: Fill a plate with spaghetti and top it with the spinach sauce. Stir the spinach sauce into the spaghetti. Now your dish is ready to enjoy.

Tips

  • Don’t overcook the spaghetti.
  • Leave out adding oil to the water as that will cause the sauce to slip off the spaghetti.
  • Let your water come to a boil before adding the spaghetti.
  • Stir the spaghetti frequently when cooking.
  • Add salt to the water you will be using to cook the spaghetti.
  • Don’t overcook the garlic you don’t want it to burn.
  • You can use fresh garlic if you don’t want to use minced garlic.
  • Substitute the canned spinach for fresh spinach if you prefer.
  • Also, frozen spinach will work too just thaw and squeeze out all the water.
  • If you will be using fresh spinach you will cook the spinach until wilted and then season. Follow the directions above.

  • 13.66 Oz. Can of Thai Kitchen Coconut Milk
  • 3 Teaspoons Minced Garlic
  • 3 Teaspoons Oil
