Minced Garlic– Adds a great garlic flavor.
Red Pepper– Brings color to the recipe.
Onion– One small onion is needed.
Salt– Small amount of salt is added to enhance flavor.

How To Defrost Shrimp
To defrost quickly you can remove the shrimp from the package and place it in a bowl. Then run it under cold water for 4-8 minutes or until the shrimp is thawed out. After thawed drain the water out.

- Gather all the ingredients needed so that you have everything you need close by.
- The first step in making this recipe is to cut up the red pepper and onion into small pieces. Set aside.
- In a bowl add the coconut milk, salt, and curry powder. Stir around well. Set aside to use later.
- Defrost the shrimp. To thaw quickly remove the shrimp from the package and place them in a bowl. Run the shrimp under cold water for 4-8 minutes or until the shrimp has thawed out. After thawed drain all the water out.
- Then heat a large frying pan or wok with a small amount of oil.
- Add shrimp to the pan, stir around and cook for 2-3 minutes.
- When shrimp is done cooking remove from pan and place in a bowl to use later.
- Reheat the same pan with oil. When heated then you will add the red peppers, onion, and minced garlic. Stir around and cook for 2-3 minutes.
- Next, add the cauliflower rice and mix around. You may need to break apart chunks of the rice if frozen. Cook for 3-5 minutes or until heated.
- Now add the coconut sauce and stir around.
- Add shrimp and stir around to mix everything together. Cook for 2-3 minutes or until sauce is heated.
