These muffins are the perfect snack to enjoy with a cup of hot chocolate or cider. Perfect on a cold fall or winter day. These muffins are tender and full of pumpkin flavor. They are easy to make and are very tasty.

The following ingredients will be needed to make these pumpkin muffins. You will need flour, baking powder, baking soda, cinnamon, vanilla, butter, eggs, milk, salt, brown sugar, and a can of pumpkin.

I used a can of 100% pure pumpkin in this recipe, not pumpkin pie filling. The difference between the two is that pumpkin pie filling has added spices while 100% pumpkin is just pumpkin that has been pureed.

Cooking Time

You should plan 10 minutes of preparation time to gather your ingredients and make your batter. Then an additional 20 minutes of baking time.

Storing Instructions

Store the muffins in an airtight container for 2-4 days.

Place paper towels in the bottom of an airtight container. Add your muffins to the container on top of the paper towels. Place another piece of paper towel on top. Cover and then store the muffins at room temperature.

If you refrigerate the muffins the texture and flavor could change. If the paper towels become damp you can replace them. You can also freeze the muffins.

Yes, you can freeze muffins. To freeze the muffins you will want to make sure they are completely cooled down before freezing. After they are cooled down you can place them on a baking sheet and freeze them for 30-60 minutes. After that time remove them from the freezer, wrap them tightly, and place them in freezer-safe containers or freezer bags. Store in the freezer for up to two months.

  • Preheat oven to 425.
  • In a large bowl add flour, salt, baking powder, baking soda, cinnamon, and brown sugar.

  • Lower heat to 350 and bake for an additional 15 minutes.
  • To check if done insert a toothpick in the center and see if it comes clean.
  • Let the muffins cool down and then enjoy!!

  • I used libby’s 100%pure pumpkin for this recipe, not pumpkin pie filling.
  • Insert a toothpick into the center of the muffin. If it comes clean then your muffins are done.
  • Don’t overmix the batter.
