Spicy Shrimp Stir Fry- quick and easy healthy meal the whole family will enjoy. Loaded with veggies, shrimp and topped with a tasty stir fry sauce.

This recipe is perfect for a quick weeknight meal. I love making stir fry recipes they are easy and quick to make and they include vegetables. My kids are not fans of vegetables but they like to eat them in stir fry recipes.

Shopping List

You will need the following ingredients to make this recipe:

Shrimp: I used a package of small raw shrimp that was peeled, deveined, and with the tail off.

Mixed Vegetables: You will need a package of California blend mix which includes a mix of broccoli, carrots, and cauliflower.

Olive Oil

Soy Sauce

Corn Starch

Brown Sugar

Water

Apple Cider Vinegar

Onion

Red Pepper

Minced Garlic

Seasoning: Garlic Powder, Basil, Parsley, and Red Pepper Flakes

How To Defrost Shrimp: There are a couple of ways you can defrost shrimp. To defrost in the refrigerator place on a leak-proof dish or bowl and thaw overnight in the fridge.

To defrost quickly you can remove the shrimp from the package and place it in a bowl. Then run it under cold water for 4-8 minutes or until the shrimp is thawed out. After thawed drain the water out.

Frozen Vegetables: I used frozen vegetables for this recipe and I thawed them out under cold running water before cooking.

Directions

  • The first thing you want to do is gather all your ingredients so that you have everything you need close by and ready for you to use.
  • Cut up red pepper and onion into thin slices.

  • Then you will make your stir fry sauce.
  • In a bowl combine soy sauce, water, brown sugar, apple cider vinegar, minced garlic, corn starch, and red pepper flakes. Whisk around well. Cover and set aside, you will use it later.

  • Next, you will heat a frying pan or wok on medium heat with oil.
  • When heated you will add the shrimp, basil, and parsley. Stir around and cook for 2-3 minutes.
  • When the shrimp is done remove it from the frying pan or wok and place it in a bowl to use later.
  • Reheat the frying pan with oil on medium heat.
  • Now add the onions and red pepper. Cook for 1-2 minutes.
  • Next, add the mixed vegetables and cook for 5 minutes.
  • Then you will add the shrimp back into the frying pan with the vegetables and stir around well.
  • Add your sauce mixture to the frying pan and stir around. Cook for another 3-5 minutes until the sauce is warm.
  • Your dish is now ready to enjoy.

How To Store

Store in the refrigerator for 1-2 days as the vegetables tend to become mushy the longer they sit.
